What goes into creating the perfect Christmas dish?   by Jane Clarke

We are all familiar with traditional Christmas food, but for those of us who are a little more adventurous in the kitchen – or who are simply looking for something new and tasty to try this year – there are some exciting festive recipes available.

The key to creating a festive dish is to try and incorporate traditional ingredients and seasonal vegetables to retain that festive flavour. For example, we usually associate Christmas with vegetables such as parsnips, carrots, potatoes and of course Brussels sprouts. This is because these vegetables are harvested seasonally at this time of year, as with parsnips and Brussels sprouts, or could be stored easily from the autumn harvest, as is the case with carrots and potatoes. Certain spices we usually associate with this time of year are cinnamon, nutmeg and cloves. Traditional meats include, turkey, a roast joint of meat, pork, beef mutton or even goose! There are also certain fruits and berries that spring to mind, including oranges, apples, cranberries and Dried Fruit.

A salad may not be something you would think of eating at this time of year, but a winter salad can make a great healthy accompaniment to your festive meals, which despite being tasty, are often rich and fatty. You will find plenty of recipes that use apples, cranberries, oranges and pears and vegetables that are available all year round such as potatoes, carrots and broccoli. In order to make your salad a little more filling and satisfying (after all, it is cold outside) you can incorporate rich cheeses, meat and nuts. Salads do not have to be cold, and there is a vast range of recipes that add hot roasted vegetables to make the perfect warming winter meal.

If you are looking to create an impression with something a little more unusual, you could try a continental dish with chilli and spices. Dried cranberries with wasabi peas makes a great appetiser combining hot and sweet flavours. As a starter soup, pumpkin spiced with allspice and coconut milk makes a great alternative to traditional starters. There are many Christmas dishes from around the world that you could experiment with, so why not try replacing one or more of your usual Christmas dishes for something new and different this year?

Nowadays it is really easy to put together an impressive Christmas dinner with the wide range of food from around the world readily available at your local supermarket.
